The ultimate traditional Cypriot drink is served in shot glasses. Intertwined with Cypriot culture, “Zivania” is an excellent distilment with rich characteristic taste and aroma. Respecting tradition and history, “Oenou Yi – Ktima Vassiliades”, created the traditional Cypriot “Zivania” according to the ancient Greek procedure of distilment, from the indigenous varieties of Xinisteri and Mavro, which undergo a controlled fermentation procedure.
Anama Zivania is a Fine Spirit of Grapes. It is produced exclusively from age-old, non-philoxeric Mavro & Xinisteri vines, cultivated especially for ‘Anama Zivania. Following a careful vinification protocol, the rich wine pulp is distilled twice in our old school copper ambyx. The fire needed is fueled by pinewood, responsibly forested from the woods surrounding our winery. ‘Anama Zivania is enjoyed cool and makes for an ideal base for sophisticated cocktails. OUSIA is a fine, oak matured spirit of sundried grapes, made following a long and adventurous process in which the use of machinery is minimum // The old mountainous vineyard is cultivated solely by hand & tools and the fine, hand-picked grapes are naturally sundried for several weeks under the warm autumn sun // The crisp winter that follows, prolongs skin contact and fermentation , enriching the vin de raisins with complexity and finesse. An old copper distillation pot is used to distinguish the core spirit, which is then matured in an old barrique, previously previously used for aging 'Anama Vintages & Single Barrel Vintages.
