At Domaine Karanika we produce the finest quality sparkling and still wines in total harmony with nature without any concession to the health of people and the earth.
Our organic/ biodynamic vineyards at the Amyndeo plateau in the far North-west of Greece include old to very old ungrafted Xinomavro vines, the younger Assyrtiko and the almost forgotten Limniona. Our wines range from the sparkling Karanika Cuvee Speciale and Prestige, our aged red Xinomavro/Limniona blends to our razor-sharp white Assyrtiko.
The Amyndeon area
Around 650 meters above sea level, it lies on the far side of Mount Vermio, blocked off from the influence of the Aegean. These features of Amyndeon's setting cause the local climate to be entirely continental, though moderated somewhat by the influence of Lake Vegoritis, pushing the Xinomavro vintage for red wine back to mid-October.
Amyndeo has the coolest climate of all the wine-producing regions of Greece. Soil tends to be a sandy clay around Xinonero, on the slopes west of Amydeon, and a sandy loam around Ayios Panteleimonas, on the plain area just west of lake Petron - all with considerable variation in calcium content from vineyard to vineyard.

Applying the traditional method of Champagne, this marriage between the lovely and elegant white Assyrtiko and the extraordinarily structured xinomavro wine remained on its lees for at least 48 months acquiring a highly complex and unique character that can be envied by several champagnes worldwide.

Delicate fragrances with chalky tones pave the way for a stringent impulse of taste: Wild roses strawberries, raspberries. Persistent, high-quality foaming, achieved with a second fermentation in the bottle (methode traditionelle), with small-sized bubbles to travel and carry freshness to the top of the glass, highlighting all the aromatic character of this exceptional wine.
